Pumpkin Pie Smoothie

Vegan, Refined Sugar Free, and Gluten Free Friendly

It’s fall, which means it’s inevitably pumpkin spice season. Whether you like pumpkin spice everything or not, this smoothie has caught me by surprise. It’s creamy, dreamy, ultra-filling (thanks to all the natural fiber), and subtly packs a nice little fall punch. It’s not overly pumpkiny or spicy, which to me, is a win. Meals for me lately have been majorly lacking inspiration ever since we got our 10 week old puppy (@woofitsmejacques) and I needed something that would keep me full for hours. This smoothie does just that. So if you find yourself lacking the seasonal spirit or just need something that’s filling and delicious, try this and let me know your thoughts. I hope you enjoy it as much as I have been.⁣

Ingredients

1 frozen banana⁣
1 cup frozen cauliflower rice⁣
½ cup pumpkin puree⁣
½ cup water⁣
½ cup plant milk (I use organic unsweetened soy)⁣
2 pitted dates⁣
2 tbsp hemp seeds
2 tbsp chia seeds
2 tbsp cacao nibs, divided
1 tsp pumpkin pie spice⁣
1 tsp maca
1 tsp vanilla extract⁣
¼ tsp almond extract
A pinch of kosher salt

Method

Toss above ingredients into a high-speed blender while reserving 1 tbsp of cacao nibs.

Combine until you reach your desired consistency. Personally, I love thicker smoothies so this requires the amount of milk I’ve listed. If you like a thinner consistency, use more liquid when blending.

In the bottom of your glass, add half of the cacao nibs and pour to serve. Top with the remainder of cacao nibs along with extra pumpkin pie spice and flakey salt. ⁣
