Peanut Butter + Jelly Stuffed Dates
Vegan and Gluten Free Friendly
In my freezer, you’ll always find a container of stuffed dates. Why? Because they are quite possibly the easiest dessert you can prep that’s no bake and requires the least amount of effort. Not to mention, when frozen, dates get a caramel-like consistency that somehow make them even more satisfying. So if you find yourself craving something salty and sweet, grab the ingredients below and thank me later.
Ingredients
1 package of medjool dates
Natural peanut butter (or other nut butter of choice)
Mixed berry preserves jam (or jam of choice)
Maldon flakey salt
Method
Carefully make lengthwise incisions in the center of the date and remove pits, still leaving the date itself whole. Repeat and set aside.
Once dates are pitted, take a spoon and fill them with your nut butter of choice. Repeat this step with the jam and top with flakey salt.
You can always enjoy them immediately after this but I love freezing them.
To freeze, place your dates in the freezer for 20-30 minutes or until hard.
Enjoy immediately or store in an airtight container and leave them in the freezer for later.
