The Ultimate Lazy Pizza

The ultimate lazy pizza that will have you coming back time and time again. Okay but seriously, I wish I did this years ago. All you’ll need is some sort of burrito style tortilla, some marinara sauce (or tomato paste), cheese, veggies, and that’s it. Feel free to use as many or as little toppings as you’d like. This recipe was inspired by a recent refrigerator clean-out and have made several variations since- all of which have been amazing and so satisfying.
Ingredients
1 burrito style tortilla (I used sprouted whole wheat)
2ish tbsp of marinara sauce (I used an arrabbiata sauce from tj's)
vegan cheese (I love everything from Vio Life)
a handful of mushrooms, sliced
a handful of bell peppers (I used frozen)
1 small vine tomato, thinly sliced
kalamata olives, sliced in half
spinach
basil
sea salt, pepper, red pepper flakes
extra virgin olive oil
balsamic glaze (optional, but highly recommend)
Method
Preheat the oven to 350 F and toast your wrap until slightly crisp (about 5 minutes or so). I like to put a small amount of extra virgin olive oil on the baking sheet to ensure my wrap doesn’t stick. Or you can always place some parchment paper underneath.
While it’s crisping, in a medium pan sauté the mushrooms and peppers with a small amount of oil, salt, and pepper. You can definitely skip this step but I really love the flavor that sautéing adds. Set aside once done.
Coat the wrap with a thin layer of extra virgin olive oil and add (in this order) marinara sauce, cheese, sautéd veggies, vine tomato slices, kalamata olives, more cheese, salt, pepper, red pepper flakes, and place back in the oven until the cheese melts. You can place it under the broiler as well to speed things up. Once the cheese melts, add some fresh spinach (or whatever green you have) and pop back in the oven for 2-3 minutes (just until it’s slightly wilted).
Top pizza with more fresh cracked pepper, basil, extra virgin olive oil, and balsamic glaze. Slice and enjoy!
