Roasted Walnut Butter

Okay, I’m kinda feeling silly for not making this sooner. Nut butters have always seemed labor intensive but this was very simple, and only requires 4 ingredients. I was doing a quick scan in my kitchen to see what I already had (I’m a firm believer in using what you have to avoid food waste) and violà, put this little recipe together. Though I love a good pre-made nut butter (Georgia Grinders and Artisana I’m lookin’ at you) it can get costly and honestly, if you have a food processor, and have all the ingredients there’s no reason to not try this. I promise you won’t regret it.

Ingredients

1 cup of raw walnuts

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp kosher salt

 

Method

Heat oven to 350°F degrees. Lay walnuts out on a baking sheet. Roast for 7 minutes or until golden brown and fragrant. You can also omit this process if you want a raw walnut butter.

Place in a food processor and mix until the nuts turn into a butter-like consistency (about 10ish minutes). Keep in mind that you’ll have to start and stop the processor a few times to scrape the sides with a spatula. It’ll go from whole nuts to meal to butter. It takes a little bit of patience but don’t get discouraged.

Add in your salt, cinnamon, and vanilla extract and process again for a couple minutes until everything is well combined and reaches the consistency you’re looking for.

Store in an airtight container in the refrigerator, and enjoy on smoothies, toasts, oats, etc!
