Thumbprint Holiday Cookies
Vegan and Gluten Free Friendly

This December has not gone to plan to say the least (l’sigh). But remember, this is life and sometimes this is just how it goes. Regardless, I’ve been determined to fit in some holiday cheer. Whether you yourself, or a loved one needs some much needed Noel, these vegan thumbprint cookies are kind of doing it all for me. They are soft- pillowy if you will, jammy, tender, all without being overly sweet. Alas, let’s get into it.
Ingredients
2 cups all-purpose flour (I used a half all purpose and half gluten free flour since that’s what I had)
3/4 cup butter, room temperature (I used earth balance)
1/3 cup sugar (I used cane)
2 tbsp plant milk + more (I used unsweetened soy milk)
1 tsp vanilla extract
1/2 tsp almond extract
1/2 tsp kosher salt (I used diamond kosher)
Jam of choice (I used bonne maman mixed berry)
Powdered sugar for dusting
Method
Preheat oven to 350 F (177 C). Line a baking sheet with parchment paper and set aside.
In a medium bowl, combine the flour and salt together. Set aside.
Using a stand mixer (you can do this by hand if you don’t have one), add the room temp butter and beat until silky smooth (around 30 seconds).
Add the sugar and mix until incorporated. Do the same for the extracts and plant milk.
Slowly start to incorporate the flour until a dough forms. It’s important to not over mix your dough and if the dough is dry, add 1 tsp of plant milk at a time until it reaches a smooth consistency.
Form 2 teaspoon balls using a teaspoon measure. Once the dough is gone, grab a 1/4 tsp and use the back of it to make indentations into the balls. Only press half way down.
Using a small spoon, place preferred jam in the center.
Bake for 17-25 minutes- remember all ovens are different and check at the 17 minute mark. The bottom of the cookie should be lightly golden brown. Cut one open to ensure they’re baked through.
Let cool for 5-10 minutes before dusting them with powdered sugar.
Store in an airtight container and enjoy.
